  • 2 ripe Papayas
  • 2 pieces preserved stem Ginger in syrup, drained and 1 tbsp. syrup from the jar
  • 8 cookies, coarsely crushed
  • 3 tbsp. Raisins
  • Rind and juice of 1 Lime
  • ¼ cup Pistachio nuts, chopped
  • 1 tbsp. light Brown sugar
  • 4 tbsp. double heavy cream, extra to serve

How to Make Papaya Baked with Ginger

  • Preheat the oven to 200 degrees C.
  • Cut the papayas in half and scoop out their seeds.
  • Place the halves in a baking dish and set aside.
  • Cut the stem ginger into the matchsticks.
  • Make the filling. Combine the crushed cookies, stem ginger matchsticks and raisins in a bowl.
  • Stir in the lime rind and juice and two thirds of the nuts, then add the sugar and ream.
  • Mix well. Fill the papaya halves and drizzle with the ginger syrup.
  • Sprinkle with the remaining nuts.
  • Bake for about 25 minutes or until tender.
  • Serve each papaya half with a generous helping of cream.
